Blueberry Goat Cheese Drop Biscuits

Ingredients:

  • ¼ cup cold unsalted butter
  • 2 cups all-purpose flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp kosher salt
  • 2 oz Amazing Acres Chèvre
  • 1 cup buttermilk
  • 1 cup fresh blueberries

Directions:

Preheat oven to 400°F. With a cheese grater, coarsely grate the butter and place in the freezer while you prepare the other ingredients.

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Using your fingers, incorporate the butter and goat cheese until the mixture has the texture of flakes and small pellets. Pour the buttermilk over the dry mixture and stir with a fork just until moistened. Fold in the blueberries.

Drop biscuits 1 inch apart onto baking sheet lined with parchment, using about 1/4 cup of dough for each. Bake 14 to 16 minutes, until tops are golden and lightly firm. Enjoy warm or at room temperature.
